So game shape resets this Monday, but then there is only a scrimmage on Thursday before the training update and game shape update on Friday morning. Does the first 'pre-week' of the new season have any impact on game shape? Or do we stay reset up until the first official Season 21 game on August 25th?

it will stay the same at "respectable" unless you try to train GS. idk if thats a good idea but yeah GS stays at 7 even if a player doesn't play at all........

Friday the 24th? The latest S20/S21 schedule says that it all updates on the 20th.
If it updates on the 24th, then that would be nice to know, as any injuries that take place in the Thursday scrimmage would also be reset, but I'm not sure that's the case.

It's a little bit of both. The GS should be set to respectable for all players when the season rolls over, and then on the training update on Friday it will remain at respectable for every player. (I assume that new-created teams have their players start at respectable, but if they don't that may be an odd exception that really doesn't matter). The first training update where GS will be changed is 8/31.

Everyone is correct, all players' game-shape will stay at 7, even after Friday's (8/24) update.
Injuries will be reset on Monday (8/20), but not on Friday (8/24). The next injury reset would be next season.
The S20/S21 schedule isn't all-inclusive.
