I've read a few posts lately regarding training a SF.
My 19yo SF is 6'7"
My Question:
When training 1o1 does it matter to his development if you are 2 position training and it is Guards or Forwards selected for the 1o1 training?
If yes, does it matter if he logs his minutes at SF vs PF?
If yes, what if one game he is SF and in another he is PF, so he gets split minutes at these two positions?

it does not matter if he plays at SF or PF for the 1 v 1 forwards, so long as it is 1 of those 2 positions and he gets 48+ minutes.

1 v 1 forwards trains your IS a bit more than 1 v 1 guards.

1x1 training will train different secondaries for guards and forwards, in particular it will boost IS if you do 1x1 for forwards.

It doesn't matter if he plays SF or PF, as long as the sum of his minutes as SF and PF is 48 or higher. For instance, if he plays 26 mins in one game as SF, and 32 in the next one as PF, he will get full training if you do 1x1 for forwards.
