Say my current level of enthusiasm is 5 and I play Crunch Time for 3 games straight. Then will enthusiasm drop by 1 each game, or can it drop by 2 on my 2nd or 3rd game?

I would not recommend playing crutch time for 3 straight games. But with an enthusiasm of only 5, I strongly urge you not to do that. Maybe you can play crunch time for two of those games. Consider your options. If you know you will win playing crunch time against 2 of these teams then do that. And TIE the most unwinnable game. This way you can get a couple wins without completely destroying your chances for the next 3 weeks. If you Crunch time 3 in a row. You will likely lose the next 3-4 games anyway.

I propose doing "Take it Easy" if you are going against the worst teams (6th to 8th place teams) and by then you would have some more enthusiasm to play "Crunch Time" for maybe 2-3 games

Practical example. You have ent 8 on the match day. You play normal. The next day your ent is...???? 7!

So, ent goes by 1 towards 5. Maybe more correct was saying like you said it - normal doesn't affect ent. But I think we are both right. Just saying it in a different way.

Yes but if I have 6 enthusiasm, and play normal, it will still show as 6 enthusiasm the next day. So it doesn't drop by 1.
I might have 13 enthusiasm and then the next day I might have 11 shown.
What he said was correct.

a) CT
b) TIE
c) Normal

Immediately after the game your enthusiasm would be:
a) 5-ish
b) 13-ish
c) 10

(I am pretty sure that there are sublevels for enthusiasm, hence the "ish" to signify that you could end up one higher or lower depending on how close to the threshhold you are.)

CT will cut your enthusiasm in half.
TIE will increase your enthusiasm by 33%.
Normal will not affect enthusiasm level.
However daily update will cause enthusiasm level to tend towards 5.

If your enthusiasm is above or below 5 and you play normal many weeks in a row, will the enthusiasm revert back to 5 exactly or will it always be just a little bit off (like an asymptote if you know your maths). For example, you play CT the first game of the season and then play normal every game after that... You say it tends towards 5 but will it ever actually get there?
